Once Upon a Time in Neverland

Y: I can’t keep on that lame dance for good. You got to make choices. You have to decide which side you are.

X: You are scaring me.

Y: I never thought the idea of losing me will scare you that much.

X: it isn’t. The idea of marrying you is!

Oriental rice with nut mix ( Ruz Bil Khalta)

Ingredients

2 cups rice
1 medium onion finally chopped
2 cups chicken broth or (water+ 1 cube chicken stock) plus another quarter or half cup to cook the rice depending on the kind of rice you are cooking.
Butter or oil … etc
2 tablespoons full sugar
1 teaspoon full cinnamon
Salt – to taste

For the nut mix you need, a handful of raisins & a handful of almonds or hazelnuts or both
Almonds should be boiled in hot water then peeled and halved. In case of using nuts, it should be roasted in a hot ban till the thin peel fall off. Then it should be halved too.

Preparation:

First prepare the stock that you will cook the rice in by caramelizing the sugar in a pot with a few drops of water. After the sugar turn into golden brown add the chicken broth and bring to boil.

On the pot you will be cooking the rice in, put around 1 large tablespoon of butter + oil or purified butter or oil (the amount and the type is up to your preference but should be enough to cook the onions) then add the finally chopped onions and a dash of salt. Cook the onions till golden. Then add the cinnamon and stir. Then add the rice, stir well then add the stock made of chicken broth and caramel. Bring to boil then reduce heat till it is done.

On a frying pan, add a spoon of butter (not recommending oil because you want to add taste to your nut mix), then add the almonds and hazelnuts till golden, and then add the raisins, they will start popping take off heat before they fully cook because they burn easily.

Serve the rice and the nut mix on top.
